Important to Note

Weight

The two most commonly used units of weight (or mass) measurement for cooking in the United States are the ounce and the pound.
It’s important that you do not confuse the ounce of weight with the fluid ounce.  They are not the same as there is no standard conversion between weight and volume unless you know the ingredient’s density.

To complicate mattters, there are different kinds of weight measurement; Apothecaries, Troy and Avoirdupois weight. When someone in the USA refers to pounds and ounces (especially in cooking) they are usually referring to Avoirdupois weight.
